Christmas Eve Relief

Good evening one and all... Well we have been cleaning my house all day because I'm having Christ-mas Day at my house. Usually I have Christ-mas Eve at my house but everyone's schedule could not accommodate that. And if you are like me I hate to cook after I've spent the day cleaning my kitchen and want it to stay pristine so I try to think of easy and fast recipes to not mess things up so here goes....

Christ-mas Relief
Ingredients:
1 1/2 lbs. ground Turkey, browned
Pam cooking spray
1 1/2 Tbsps olive oil ( EVOO)
4 cups fresh spinach
1 egg for each person eating
Water
5 Tbsps garlic powder
Gluten free Penne noodles

Directions:
In a frying pan, Spray Pam cooking spray. Add ground turkey and oil to pan. Cook turkey meat until browned. Add garlic powder, Add fresh spinach and stir around until wilted. Add one egg for every person eating. Stir egg until scrambled and cooked throughly. Serve over cooked gluten-free Penne noodles. Top with cheese. Melt cheese in microwave. Yummy. Serves 3-4

The Crab Cooker

    Well I've had better eating experiences in my life. My family and I went to the Crab Cooker in Newport Beach. I asked the waitress if they had a gluten free menu....her response was "what is that?"  "I don't understand what your asking about". I explained that I could not eat anything that had wheat or gluten in it. Her response was to another waitress "Do you know anything about this Glutton free diet?" Freudian slip I'd say. Her waitress friend came over and said "yeah she can't eat anything with flour in it". Our waitress just shook her head like she'd crawled out from under a rock....with her cigarette carton and hacking cough with her. Then she proceeded to take our order while I ask her to ask if the potatoes had flour added to them, she had to go ask. The other waitress informed me that the rice had vermicelli in it and that was wheat.....Our waitress looked stunned to know that. Then she coughed a 3 pack a day habit cough. I asked if they had salads, she said they did not, they've never had salads. I then ordered the combination fish skewer, she asked if I wanted the potato or rice. I was safe with the potato, because it was potatoes with Romano cheese. Hellllooo rice has vermicelli or little pieces of wheat! Asked if I wanted cole slaw or sliced tomatoes. Yum, I guess its the tomatoes then cuz, I just didn't want "little misinformed" to have to ask again. So the meal comes and on my plate for decoration was one piece of romaine lettuce. Wow o.k. they could have made a salad for me. It wouldn't have been that much trouble and I would have been willing to possibly come back. But besides the tasty fish they are known for, and the yummy stick to your ribs and burnt Romano potatoes, there were 4 sliced tomatoes. One skewer of 4 pieces of fish with 4 shrimp and 2 scallops, for $14.95 was crap.
   Then as my family was finishing their dinner, I go looking for the manager in the blue chambray shirt I'd seen earlier to pick his brain about the lack of gluten free choices or unknowable waitresses who know about gluten free items or things on their menu and how their made. He's no where to be found, but I meet another hostess who informs me that they've been serving food this way for 59 years and she doubts that they'll change their menu. I said well I write a blog about restaurants that serve gluten free fair to their customers and I'm not sure I can recommend this restaurant until they at least have salads on the menu. The only salad that was on the menu was a fish salad with mayo. She said she'd inform him. It was said with the kind of smirk like ya I'll tell him. hahaha.

I am hereby starting my mama grant's gf scale of gluten free offered restaurants
The scale will be 1* for excellent restaurant has a gluten free menu
                          2** for restaurant people are knowledgable and 1/2 selections are gluten free
                          3*** restaurant people have heard of gluten free and 1/3 are gluten free
                          4**** this restaurant has little or no gluten free items and no ones heard of gluten!
                          5***** Don't bother with this one its still in the dinosaur age! No gluten free and not willing
                                       learn anything about the  gluten free life style.



Crab cooker in Newport Beach gets a 4 at best.


As we drive down Newport Blvd toward the freeway there's an Outback Steakhouse about 1 1/2 miles down the road. Damn I could have had a great meal. Outback is a definite 5! Next time!!!!!

Chicken Curry Soup

Ingredients
2 boxes of Trader Joes Chicken Broth Gluten Free
1 lb. left over cooked chicken pieces, cut bite size
1 large can of Bush's pinto beans, rinsed
2-3 stalks of celery, sliced thin
1 handful of Bunny luv carrots, sliced into 1/4s
4 TBSPs of Curry powder
1/4 onion or onion flakes
2 TBSPs garlic powder
2 TBSPs pepper

Directions
Put all items in a large pot cook 45 minutes and enjoy!!!




I found at Sam's Club the first great tasting cracker. Crunchmaster Originals. They are to die for. Do you remember the taste of the original Doritos? the ones that tasted like they had been dipped in butter? These taste just like them, plus they have flax seed baked right in and they are awesome. You get 2 large bags in one box. enough for two parties to feed.  They are the ONLY gluten free crackers at Sam's. I told them they better not get rid of them or I'd stop shopping there. haha like I have that kinda power!!






Turkey Enchilladas

Ingredients
Corn tortillas ( small taco size)
5 large mushrooms cut into small bits
2 stalks of green onions sliced into thin pieces
1 orange bell pepper cut into small pieces
4 stalks of celery cut into thin pieces
4 roma tomatoes cut into small bits
large can of La Victoria red enchillada sauce.
6 cups of mexican shredded cheese (approx)
2 lbs of ground turkey cooked
Mrs. Dash Southwest Chipotle seasoning
Garlic powder

Directions
Cook Turkey meat until browned slightly dust with Garlic powder and Mrs Dash southwest chipotle seasoning. Drain and set aside.
In a deep dish 9x12x4 pan spray with Pam cooking spray and line the bottom with 16 corn tortillas one on top of another.
Layer on top of tortillas, 1/2 of the mushrooms, 1/2 of the green onions, 1/2 the bell pepper, 1/2 of the celery,
1/2 of roma tomatoes. Then sprinkle all of the turkey meat on top of the former items. Top with 1/2 of the mexican cheese. Pour 1/2 of can of enchillada sauce over top.
Then repeat with tortillas, mushrooms, green onions, bell peppers, celery, tomatoes and use a knife to make a slice all the way to the bottom of pan. Then pour the other 1/2 of enchillada sauce over top then sprinkle with mexican cheese. Cook in oven at 400 degrees for 30-45 minutes until heated through!!!!

Products that I use

Hello. Today I thought I would give you a few of the labels I use in my cooking so that you might get them.
I live in San Dimas so the nearest shops that sell some gluten free items are: Sprouts in Claremont on Foothill Ave., Vitamin City behind Del Taco on Arrow Hwy, and believe it or not Wal Mart. I know some of my friends or relatives don't shop at Wal Mart but their plain wrap Great Value I think its called is very much gluten free. But still read your labels folks cuz just when I think I'm on top of my game wowie I get hit with a label I didn't see coming.
Here are the products:
Pamela's Chocolate Chunk Cookie Mix (Wheat and Gluten free)

Stagg Turkey Ranchero Chili with Beans found at Ralphs

Member Mark Gourmet Sausages (Mozzarella & Roasted Garlic, Sun dried Tomato with Provolone Cheese, Chicken & Apple) these are all chicken sausages.

Lundberg organic Elbow Brown rice pasta

Heartland Pasta Gluten free and Wheat free

Bob's Red Mill All purpose flour - great stuff!

Bisquick Gluten free makes the best pancakes!!







Hot Dog Medley

Ingredients

1 pkg.Beef Hot Dogs GF
1 pkg. frozen Peas
2 cups fresh Broccoli
1 pkg microwave brown rice
1 TBSPS dried onions
1 tsp garlic powder
GF marinade to taste
2TBSPS EVOO

Directions
Slice hot dogs in 1/4's then 1/4's again. Cook them in a large skillet in EVOO until they are slightly browned. Add garlic powder and dried onions to pan. Add frozen peas and 1 cup water to pan. Add broccoli, Stir all together and cook on medium high heat until broccoli is tender and peas are well cooked. Add marinade and brown rice. Heat through and serve in bowls Yum. serves 4-5

I know not everyone eats hot dogs, but every once in a while I gotta have one, so I drag my family with me! but I do try to bring in the veggies along with it!!






Another gem that I came up with  one night when  I had this enormous bag of frozen mixed fish soooooo

Mixed Fish Soup

Ingredients
3 cups of Frozen Mixed Fish (Paella) bought at Sam's Club or Costco
1 bag of frozen corn (small)
4 handfuls of frozen green beans
4 cups of cooked brown rice
3 cups fresh spinach
3 chopped tomatoes
2 TBSPs garlic powder
2 TBSPs minced onions
2 TBSPs Better than Boullion Chicken paste

Directions
Get a large pot with a lid and fill it with water. Put 2 TBSPs of chicken boullion paste in pot, stir until disolved.
Add 3 cups of mixed fish, stir,add corn, stir, add green beans, rice, chopped tomatoes, spinach, stir. Cook and stir fro about 45 -1 hour on high heat. Serve in bowls. Serve hot. Great on a cold day!
